Baked Lima Beans
Baked Lima Beans is an moderately easy dinner. Made with 1 lb. lima beans, 1/4 lb. bacon, 1 chopped onion, 1 can tomato soup and 1 c. brown sugar (try 1/2 c. the first time to see if it is sweet enough), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Soak lima beans overnight in enough water to cover.
Next morning, throw out water, put fresh water in pot (enough to cover) and cook until tender (not mushy).
Saute bacon and onion.
Save a little sugar and a few bacon pieces for top.
Save about 1/2 cup cooking water to use when combining cooked beans, fried bacon and onion.
Add soup.
Add 1/2 cup brown sugar.
Put in baking dish. Top with brown sugar and bacon pieces or strips.
Bake at 350Β° until brown on top (about 1 hour).
