Baked Lima Bean Casserole
Baked Lima Bean Casserole is an easy dinner. Made with 4 (15 oz.) cans seaside lima beans, gingersnaps, 6 strips bacon, 1 c. brown sugar and 1 c. catsup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Use 3 cans of beans with juice; reserve juice from 1 can in case of drying out.
Line a 9 x 13-inch pan with gingersnaps. Cover with beans.
Mix brown sugar and catsup together; pour over beans.
Bake, covered, at 400Β° for 40 minutes.
Remove cover and top casserole with bacon.
Return to oven with no cover and bake another 20 minutes longer.
