Heat oven to 375°.

Place fish in large baking dish and place potatoes (cut into

1/4-inch slices) and onions around and on top of chopped tomatoes and juice all over fish, potatoes onions.

Sprinkle with garlic, parsley, Parmesan cheese, salt and pepper.

Pour olive oil on fish and bake at 375° for 1 hour and 15 minutes.

Cover pan with tin foil, removing last 30 minutes.
