Baked Eggplant
Baked Eggplant is an easy dinner. Made with 1/2 c. mayonnaise, 1/4 c. finely chopped onion, pepper to taste, 1 medium eggplant, peeled and sliced into 1/4-inch slices and 32 round buttery crackers, crushed, this recipe delivers authentic, satisfying flavors. In small bowl, combine mayonnaise, onion and pepper.
Brush on both sides of eggplant; dip in cracker crumbs.
Bake on ungreased cookie sheet in 350Β° oven, turning once until browned, about 30 minutes.
Serve hot.
Always soak sliced eggplant in salted water about 30 minutes before cooking.
