Baked Eggplant
Baked Eggplant is an moderately easy dinner. Made with 1 large eggplant, 3 or 4 tbsp. oil, approximately 28 oz. spaghetti sauce, mushrooms and 1/2 c. parmesan cheese, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut eggplant in half lengthwise; scoop out inside, leaving 1/4-inch shell.
Cut scooped out portion into 1-inch squares. Saute in oil 5 minutes or until tender.
Heat spaghetti sauce in pan.
Add Parmesan cheese, mushrooms and bread crumbs.
When heated, add eggplant.
