Baked Caramel Corn
Baked Caramel Corn is an moderately easy dinner. Made with 1 c. (2 sticks) butter or margarine, 1 tsp. vanilla, 6 qt. popped popcorn, 1 tsp. salt and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Melt butter; stir in brown sugar, corn syrup and salt.
Bring to a boil, stirring constantly.
Boil without stirring 5 minutes. Remove from heat.
Stir in soda and vanilla.
Put popped corn in 2 large shallow pans.
Pour mixture over popped corn, mixing well. Bake at 250Β° for 1 hour.
Take out of oven every 15 minutes and stir.
Cool completely.
Break apart and store in tightly covered container (Tupperware).
Makes about 5 quarts.
