Bacon and Onion Cornbread
Bacon And Onion Cornbread is an moderately easy dinner. Made with 1/3 c. chopped onion, 1 tbsp. butter or margarine, 1 c. yellow cornmeal, 1/2 lb. bacon, cooked crispy and well drained and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Saute onion in butter until tender, about 5 minutes; set aside. Cook bacon until crispy; drain well.
In a large bowl, combine cornbread, bacon in bits, salt, baking soda and pepper.
Add milk to beaten eggs.
Mix well.
Gradually add buttermilk mixture and onions to cornbread mixture stirring constantly.
Pour into a greased 3/4 x 7 x 1 1/2-inch oblong pan.
Bake in 425Β° oven for 20 minutes.
