Avocado Salad
Avocado Salad is an moderately easy dinner. Made with 2 large avocados (about 1 lb. each), 2 medium plum tomatoes, 2 medium oranges, 1 (16 to 19 oz.) can black beans, rinsed and drained and 1 tbsp. chopped cilantro or parsley, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
About 30 minutes before serving, peel avocados and discard pits.
Cut avocados and tomatoes into bite size chunks.
Cut peel from oranges.
Cut oranges crosswise into 1/2-inch thick slices. In a bowl, gently toss avocados, tomatoes, orange slices, black beans, cilantro and salt.
Makes 4 accompaniment servings.
