Avocado Omelet
Avocado Omelet is an moderately easy dinner. Made with 1 1/2 c. sour cream, 1/4 tsp. pepper, 1 tsp. salt, 2 large tomatoes, peeled and chopped and 1 avocado, diced, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Heat sour cream, salt and pepper in double boiler.
Add tomatoes and avocado.
Heat for another 5 minutes.
Meanwhile, blend the beaten eggs with milk and salt.
Pour into heated butter in skillet and cook gently, lifting edges occasionally to let uncooked part run underneath.
When set, pour half of sauce mixture over omelet and fold over.
Place on hot platter and pour on the rest of the sauce.
Makes 4 to 6 servings.
