Artichoke Frittata
Artichoke Frittata is an moderately easy dinner. Made with 2 6 oz. jars artichokes, chopped, reserve the liquid, 1 medium onion - diced, 1/2 tsp. garlic salt, 4 eggs, beaten and 2 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Heat liquid drained from artichokes in a skillet over medium heat with onion and garlic salt.
Saute onion until tender. Starting with beaten eggs, add remaining ingredients including chopped artichokes.
Add ingredients from skillet. Pour into buttered 9 x13 pan and bake for 30 minutes at 350Β°.
Cut into squares, serve warm.
