Artichoke Balls
Artichoke Balls is an moderately easy dinner. Made with 1 (14 oz.) can artichoke hearts, 1 c. italian breadcrumbs, 2 eggs, 2 tbsp. grated parmesan or romano cheese and 3 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cut artichoke hearts into small pieces, then mash with a fork. (Do not purée in blender.)
Add breadcrumbs, eggs and cheese. Heat olive oil until very hot.
Remove from heat.
Add garlic and wait until garlic stops sizzling.
Pour oil and garlic into artichoke mixture.
Mix well.
Place in refrigerator overnight or at least one hour.
Roll into small balls.
Roll balls into mixture of 2 tablespoons breadcrumbs and 1 tablespoon cheese; mix more as needed.
Yield
50 balls.
Bake 10 minutes at 350°.
Eat cool or warm.
