Arkansas Duck Casserole
Arkansas Duck Casserole is an impressive dinner. Made with 2 ducks, 1 medium onion, sliced, 2 ribs celery, chopped, 1 stick butter and 1/2 c. onion, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook ducks with sliced onion and celery in enough water to cover for 2 hours or until tender.
Remove from bones and cut into bite-size pieces.
Cook rice in liquid from duck.
Saute chopped onion in butter in a skillet.
Stir in flour; add mushrooms and liquid, milk, parsley, salt and pepper.
Mix well.
Stir in rice and duck; place in greased 2-quart casserole.
Sprinkle with almonds and bake at 350Β° for 25 minutes.
Serves 6.
