Apricot Nut Bread
Apricot Nut Bread is an moderately easy dinner. Made with 2 1/4 c. biscuit mix, 1 c. quick cooking rolled oats, 3/4 c. sugar, 1/4 tsp. salt and 1 tsp. double-acting baking powder, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Place biscuit mix, rolled oats, sugar, salt and baking powder in large bowl of electric mixer.
Using kitchen shears, snip apricots in thin pieces (or chop fine with knife).
Add apricots and nuts to dry mixture; toss until well coated.
In small bowl of electric mixer, beat the egg.
Add milk; beat until blended. Blend egg-milk mixture with the dry ingredients at medium speed; beat on high speed for 30 seconds.
Turn batter into a greased and floured 9 x 5 x 3-inch loaf pan.
Bake at 350Β° for 60 minutes. Yields 1 loaf.
