Apricot Nut Bread
Apricot Nut Bread is an moderately easy dinner. Made with 1 1/2 c. dried apricot pieces, 2 eggs, 2 c. sifted flour, 1/4 tsp. soda and 1 tsp. grated orange rind, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Soak apricots in water for 30 minutes.
Drain and chop.
Cream sugar and butter.
Beat eggs and add alternately with orange juice.
