Apricot Chicken
Apricot Chicken is an moderately easy dinner. Made with 2 1/2 lb. chicken thighs (about 8), 1/3 c. apricot preserves, 2 tbsp. soy sauce, 1 tbsp. lemon juice and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Remove skin from chicken.
Arrange chicken in 12 x 8-inch baking dish.
In a small bowl, combine preserves, soy sauce, lemon juice, garlic and ginger.
Brush chicken with some preserve mixture.
Cook, covered with wax paper, on High for 14 to 18 minutes, until tender or juices run clear when pierced with a knife.
Occasionally brush chicken with preserves and rearrange halfway through cooking.
Put on rest of preserves.
Sprinkle with green onion.
Serve with hot rice.
