Apple Crumb Loaf
Apple Crumb Loaf is an moderately easy dinner. Made with 3 medium size tart apples, 1 c. margarine, 3/4 c. sugar, 2 eggs and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Quarter, core and peel apples.
Cut into 1-inch cubes.
Spread evenly on greased cookie sheet.
Bake at 350° for 30 minutes until apples are tender but not mushy.
Remove from pan and cool.
Beat 1/2 cup margarine until creamy; add 1/2 cup sugar.
Beat well.
Add eggs, one at a time, beating well after each addition.
Blend in sour cream.
Sift together 2 cups flour, baking soda, baking powder, salt and 2 teaspoons cinnamon.
Fold into margarine.
Add apples, folding in gently.
Pour half of the mixture into a greased, wax paper lined and greased again 9 x 5 x 3-inch loaf pan. Cut remaining margarine into remaining flour, sugar, cinnamon and nutmeg until crumblike.
Sprinkle half of the crumb mixture over the batter; pour in remaining batter.
Sprinkle with remaining crumb mixture.
Bake at 350° for 50 to 60 minutes until browned, pulled away from the edges and a toothpick inserted near center has no sticky dough adhering to it.
Cool in pan on rack 10 minutes. Carefully remove from pan.
