Angel Pie
Angel Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 1/4 tsp. cream of tartar, 4 egg whites, 3 tbsp. lemon juice and 1 tbsp. grated rinds of lemon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Beat egg whites stiff.
Add one cup of sugar gradually and cream of tartar.
Beat until stiff and shiny.
Place in a greased pie plate or one large shell sheet.
Bake at 275Β° for 1 hour.
Put egg yolks in a double boiler; heat until thick.
Add 1 cup sugar, lemon juice and rind; cook stirring until thick, 5 or 8 minutes. Beat cream.
Mix 1/2 with cooled lemon custard.
Place in a cool pie shell and top with your topping.
