Amaretti Orestano(Italian Macaroons)
Amaretti Orestano(Italian Macaroons) is an easy dinner. Made with 1/2 lb. almonds, 1 c. sugar, 2 egg whites and 1/2 tsp. almond extract, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Blanch almonds and place in warm oven 5 minutes to dry completely.
Chop almonds very fine until a powder.
Add sugar and mix well.
Beat egg whites until stiff, but not dry and add to almonds and sugar.
Add almond extract and blend all together gently, but thoroughly.
Butter and flour a baking sheet and drop batter by spoonfuls.
Leave 1 inch between cookies.
Shape spoonfuls of batter into ovals.
Sprinkle with confectioners sugar.
Let stand 2 hours and bake at 375Β° for 5 minutes or until delicately brown in color.
Makes 14 cookies.
