Almond Carob Tofu Pudding
Almond Carob Tofu Pudding is an moderately easy dinner. Made with 1 lb. soft tofu, 1 to 1 1/2 c. maple syrup, 1/3 to 2/3 c. carob powder, 1/4 c. almond butter and 2 tbsp. arrowroot powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine all ingredients except slivered almonds into food processor.
(This pudding is too thick for a blender.) Stir the 1/2 cup slivered almonds into the pudding.
Spoon into individual pudding cups and chill thoroughly before serving.
Just before serving, sprinkle a few slivered almonds on top of each serving. Almonds may be toasted if desired.
Keeps 5 to 8 days in refrigerator.
