Allison's Lemon-Zucchini Bread
Allison'S Lemon-Zucchini Bread is an moderately easy dinner. Made with 4 small zucchini (1 lb.), 2 tbsp. lemon peel, 1/4 c. lemon juice (fresh), 3 c. all-purpose flour and 1 tbsp. baking powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 350Β°.
Spray 2 loaf pans, 5 x 9-inch, with nonstick spray.
Rinse and grate zucchini.
Do not peel.
Place flour, baking powder and walnuts in medium bowl.
Blend and set aside.
Place oil, sugar, lemon peel and lemon juice in large bowl.
Beat with electric mixer until blended.
Add eggs, one at a time, and beat after each addition until well mixed.
Add flour mixture to egg mixture.
Blend.
Add shredded zucchini and mix well.
Pour batter into 2 loaf pans.
Bake 50 minutes.
