Alex Kalberer's Aspen Spinach
Alex Kalberer'S Aspen Spinach is an moderately easy dinner. Made with 2 pkg. frozen spinach, thawed and drained, 8 oz. sliced, fresh mushrooms, 1 small bottle marinated artichoke hearts, 8 oz. cream cheese and 2 to 3 tbsp. milk, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Grease square oven dish with oleo.
Drain marinade from artichokes and put marinade into frying pan.
Cut artichoke hearts in 1/2 or 1/3 and put into dish.
Saute mushrooms slightly in marinade until tender.
Put mushrooms in dish; salt and pepper. Put spinach layer on next.
Mix cream cheese and milk until icing consistency.
Spread over spinach.
Sprinkle with Parmesan cheese. Bake at 350Β° until golden and slightly bubbly, approximately 20 minutes.
