Zucchini with Pasta
Zucchini With Pasta is an moderately easy dinner. Made with 4 to 5 medium zucchini, sliced into 1/4-inch pieces (half circles), 1 medium onion, chopped, 4 tbsp. olive oil, 2 to 3 leaves basil and 1 lb. cooked rigatoni, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute onion in olive oil until soft.
Add zucchini, basil, salt and pepper and saute in frying pan until cooked, but firm under medium heat.
Combine pasta and zucchini in larger pan over low-medium heat for 3 to 5 minutes.
Remove from heat and add grated Parmesan cheese.
Mix through and serve immediately.
