Zucchini Vegetable Medley
Zucchini Vegetable Medley is an moderately easy dinner. Made with 6 tbsp. butter or margarine, 1 medium green pepper, diced, 1/4 c. chopped onions (more if desired), 3 stalks celery, chopped and 2 medium zucchini, sliced in chunks, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In very large skillet, melt butter.
Add green pepper, onions and celery.
Saute about 3 minutes.
Stir in zucchini, salt, sweet basil and soy sauce.
Cover and simmer about 5 minutes.
Stir in corn and tomatoes and the stewed tomatoes.
Cover and simmer until vegetables are crisp-tender.
You may serve this dish as a soup or serve over cooked rice or noodles.
