Zucchini Stuffing Casserole
Zucchini Stuffing Casserole is an moderately easy dinner. Made with 4 medium zucchini, sliced, 3/4 c. shredded carrots, 1/2 c. chopped onion, 6 tbsp. butter and 2 1/4 herb stuffing (pepperidge farm), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook zucchini (steam or boil).
Cook carrots and onion in 4 tablespoons of butter until tender.
Place vegetables in 1 1/2-quart casserole with soup, sour cream and 1 1/2 cups of the stuffing.
Mix well.
Then melt the remaining butter and toss with the remaining stuffing.
Sprinkle that mixture on top of the prepared vegetables.
Bake at 350Β° for 30 minutes.
