Zucchini Stuffing
Zucchini Stuffing is an moderately easy dinner. Made with 5 to 6 c. zucchini, shredded, 1 small onion, chopped, 1 tsp. parsley flakes, 1 tsp. dried basil and 3 tbsp. melted margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Place shredded zucchini in a colander.
Mix with salt.
Let stand for 15 minutes.
Using hands, squeeze the excess moisture from the zucchini.
Mix all ingredients.
Add zucchini and mix well (the stuffing will seem dry, but the zucchini will make more liquid when baked).
Pour into greased casserole dish.
Bake, covered, at 350Β° for 1 hour and 20 minutes.
Serve with chicken.
