Zucchini Relish
Zucchini Relish is an moderately easy dinner. Made with 2 1/2 c. white vinegar, 1 tbsp. mustard, 1 tbsp. turmeric (yellow), 2 tsp. celery seed and 1/2 tsp. black pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Grind zucchini, celery and onion.
Combine and refrigerate; let stand overnight.
Next day, rinse zucchini, celery and onion with water.
Squeeze out very good.
Then put all the other ingredients together.
Cook; when zucchini comes to a boil, cook 30 minutes longer.
Put in clean Mason jars.
Seal lids.
Makes about 8 to 10 pints.
