Zucchini Relish
Zucchini Relish is an impressive dinner. Made with 10 c. zucchini, sliced, 1 c. chopped green bell pepper, 2 large ripe tomatoes, 3 pods hot peppers and 2 1/2 c. white vinegar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Soak sliced zucchini overnight (do not peel). Grind bell pepper, pimientos, tomatoes, celery and hot peppers coarsely.
Add canning salt and stir well. Cover and let set overnight.
Drain and rinse well in cold water.
Add remaining ingredients, stirring well.
Cook for 45 minutes, stirring constantly.
Pack in hot jars and seal.
If needed, add water (about 1 cup).
