Zucchini-Potato Casserole
Zucchini-Potato Casserole is an moderately easy dinner. Made with 3 medium white potatoes, 2 eggs, beaten, 8 oz. mozzarella cheese, diced, not grated, 1/2 c. grated parmesan cheese and 1 zucchini, unpeeled, grated to make 2 c., this recipe delivers authentic, satisfying flavors. Cook and mash potatoes.
Add other ingredients to potatoes except margarine and bread crumbs.
Grease 9-inch pie shaped baking dish with margarine.
Sprinkle 1/2 of the crumbs over bottom of dish.
Fill with potato mixture and sprinkle with remaining crumbs.
Dot with remaining margarine.
Bake for 30 minutes in 400Β° oven.
