Zucchini Pizza Casserole
Zucchini Pizza Casserole is an moderately easy dinner. Made with 4 c. shredded unpeeled zucchini, 1/2 tsp. salt, 2 eggs, 1/2 c. grated parmesan cheese and 1 c. grated cheddar cheese, divided, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Place zucchini in strainer; sprinkle with salt.
Let drain for 10 minutes; squeeze out moisture.
Combine zucchini with eggs, Parmesan cheese and half of the Cheddar and Mozzarella cheeses. Press into greased 13 x 9 x 2-inch baking pan.
Bake at 400Β° for 20 minutes.
Brown ground beef with onion; drain.
Add tomato sauce.
Spoon over baked zucchini mixture.
Top with remaining cheeses; sprinkle with green pepper.
Bake for 20 minutes.
