Zucchini Pizza
Zucchini Pizza is an moderately easy dinner. Made with 3 c. grated zucchini, 3 eggs, well beaten, 1/3 c. flour, 1/4 tsp. salt and 2 c. grated mozzarella, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Press excess liquid from zucchini.
Transfer to mixing bowl and stir in eggs, flour and salt.
Spread evenly over bottom of well-greased 13 x 9-inch baking pan.
Bake at 450° for 8 minutes. Remove from oven; cool.
Reduce oven to 350°.
Sprinkle zucchini with cheese. Mix olives, onions and peppers.
Sprinkle evenly over cheese.
Sprinkle with oregano and basil.
Arrange tomato slices over top and sprinkle lightly with salt.
Bake 20 minutes or until cheese is bubbly and zucchini is set.
Cool on wire rack 5 minutes.
