Zucchini Parmesan
Zucchini Parmesan is an moderately easy dinner. Made with 1/4 c. peanut oil, 8 medium zucchini, 2/3 c. chopped onion, 2 tbsp. chopped parsley and 1 large clove garlic, crushed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat oil in a skillet.
Thinly slice zucchini; add to oil with onion, parsley, garlic, salt, pepper, oregano and rosemary.
Saute over medium heat until zucchini is tender.
Toss in tomatoes and continue to saute for 5 more minutes.
Turn into a serving dish; sprinkle with cheese.
