Zucchini Lemon Bars
Zucchini Lemon Bars is an moderately easy dinner. Made with 3 eggs, 1 1/4 c. sugar, 1 c. oil, 1/4 c. lemon juice and 1 3/4 c. grated zucchini, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a medium bowl, combine eggs, sugar, oil, lemon juice and lemon peel.
Beat until well blended.
Add zucchini.
Sift together the flour, baking soda, salt and baking powder.
Stir into zucchini mixture and then fold in nuts.
Pour into a greased 9 x 13-inch pan and bake at 350Β° for 45 minutes or until cake springs back when touched.
Cool in pan.
Frost with glaze, if desired.
