Zucchini Frittata
Zucchini Frittata is an moderately easy dinner. Made with 1/4 c. oil, 1 c. thinly sliced white onion, 3 c. chopped, unpeeled zucchini, 1 tsp. minced fresh parsley and 8 large eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat oil over low heat.
Add zucchini, onion and parsley. Saute until soft about 5 minutes.
Remove from heat; set aside. Beat eggs in a large bowl with grated cheese and seasonings.
Add zucchini mixture and chopped Cheddar cheese; blend well.
Pour into lightly greased 9-inch square pan.
Bake at 350Β° until just firm in the center.
Will take about 20 to 25 minutes.
Serves 6. Best if eaten hot out of the oven.
