Made with 2 lb. zucchini and yellow squash, mixed if you like, 2 egg yolks, slightly beaten, 1 c. sour cream, 2 tbsp. flour and 2 egg whites, stiffly beaten, this recipe delivers authentic, satisfying flavors. Cook whole squash 5 minutes in salted water.
Cool and slice thin; sprinkle with salt (if you like).
Mix yolks, sour cream and flour; fold into whites, then mix with squash.
In a 12 x 7 x 2-inch dish layer 1/2 the squash mix with 1/2 of the cheese and 1/2 of the bacon.
Repeat and cover with crumbs.
Bake at 350Β° for 25 minutes.
