Zucchini Casserole
Zucchini Casserole is an moderately easy dinner you can prepare in just 54 minutes. Made with fresh medium zucchini squash, unpeeled, bell pepper, chopped, ripe tomatoes, peeled and chopped, bacon, fried and crumbled and shredded process cheese, this recipe delivers authentic, satisfying flavors. Slice squash into 1/2 -inch slices, parboil for 3 minutes.
To make filling, combine remaining ingredients, except crumbs and margarine. Mix well.
Place squash in baking dish, alternating with filling.
Top with bread crumbs and dabs of margarine.
Bake in 375 degree oven for 35 minutes. Serves 6-8.
