Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1 1/2 lb. zucchini, 1 1/2 lb. ground beef, 1 medium onion, 1/2 lb. shredded cheddar cheese and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Slice zucchini (don't peel); cook in small amount of water until crisp-tender.
Drain.
Cook beef in skillet until lightly browned.
Add onion; cover and cook over low heat until onion is tender.
Season to taste.
Lightly butter a 2-quart casserole. Arrange layers of zucchini, meat and cheese; repeat, ending with cheese.
Combine mushrooms and milk.
Pour over all.
Sprinkle with cheese.
Bake at 350Β° for 35 minutes or until bubbly.
