Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. zucchini, cut up, 1 c. sour cream, 1 can cream of mushroom soup, 1/2 chopped onion and 1 c. grated carrots, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook squash in boiling, salted water, about10 minutes.
Drain thoroughly.
Add soup, sour cream, carrots and onion.
Mix stuffing with margarine.
Place half stuffing in bottom of 1 1/2 or 2-quart casserole.
Pour in zucchini mixture.
Top with rest of stuffing.
Bake at 350Β° for 30 minutes or until light brown on top.
