Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1/4 c. margarine, 1 c. chopped onion, 2 tbsp. dried parsley, 4 c. sliced zucchini (with peel) and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion in melted margarine for about 5 minutes.
Add parsley and zucchini.
Cook until tender.
Add salt, basil, pepper, oregano and garlic powder.
Blend, stir and cool.
When cool, mix zucchini mixture with the beaten eggs and cheese.
Pour into an 8 or 9-inch pan.
Bake 18 to 20 minutes at 375Β°.
Allow to set 10 minutes before serving.
