Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1 (10 oz.) can old el paso mild green chilies, 6 medium-sized zucchini, sliced, salt and pepper, 8 oz. longhorn grated cheese* and 1 1/3 c. bisquick, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Take seeds out of green chili peppers and place on bottom of 7 1/2 x 11 1/2 x 2-inch pan.
Place layer (1 1/2-inches thick, more or less) of zucchini on peppers; salt and pepper.
Then add a nice layer of cheese.
Mix Bisquick, eggs and milk.
Beat lightly and pour over mixture.
Bake 45 minutes at 350Β°.
