Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. zucchini, sliced, 1/4 c. chopped onion, 1 can cream chicken soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook zucchini and onions in boiling salted water for 5 minutes; drain.
Mix soup and sour cream.
Stir in carrots; fold in zucchini and onions.
Combine stuffing mix and oleo.
Spread half stuffing mixture in a lightly buttered 12 x 7 1/2-inch baking dish.
Spoon vegetable mixture over stuffing.
Sprinkle remaining stuffing mixture over vegetables.
Bake in 350Β° oven for 25 to 30 minutes. Makes 6 to 8 servings.
