Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 4 medium zucchini, sliced 1/2 inch thick, 1/2 c. chopped onion, 3/4 c. shredded carrots, 1 c. croutons (seasoned) and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook zucchini; drain.
Cook carrots and onion in 4 tablespoons oleo.
Stir in soup, sour cream and zucchini.
Put in greased 1 1/2-quart casserole and top with 1 cup crushed croutons with oleo, melted.
Bake at 350Β° for 35 minutes.
