Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. zucchini (1 big or 2 small), 1 can cream of chicken soup, 1/4 c. chopped onion, 1 c. drained plain nonfat yogurt and 1 c. grated carrot, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Wash and slice zucchini.
Cook for 5 minutes.
Mix soup, onion, yogurt, carrots and cooked zucchini.
Melt margarine.
Add to it the stuffing mix.
Place three-quarters of stuffing in bottom of buttered casserole.
Pour zucchini mixture over stuffing mix.
Top with remaining stuffing mix.
Bake 50 minutes at 350Β°.
