Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. zucchini, 1/2 c. raw rice, 1/2 c. milk, 1/2 c. bread crumbs and 2 tsp. melted butter or margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Slice zucchini 1/2-inch thick.
Cook with onion until almost done; drain well.
Cook rice as directed on package; reserve. Place zucchini mixture in buttered 9 x 12-inch shallow casserole dish.
Sprinkle with rice.
Mix soup and milk together, then pour over rice.
Top with cheese slices; sprinkle top with bread crumbs that have been mixed with the melted butter or margarine.
Place casserole in pan of water.
Bake in a 350Β° oven for 30 minutes. Serves 6.
