Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 4 c. sliced zucchini, 2 c. boiling water, 2 eggs, 1 c. mayonnaise and 1 c. chopped onions, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook zucchini in boiling water until just tender.
Drain.
In large bowl, beat eggs.
Stir in mayonnaise, onions, green pepper, cheese, salt and pepper.
Add zucchini; toss.
Pour into 1 1/2-quart baking dish.
Dot with butter and sprinkle with bread crumbs.
Bake at 350Β° for 30 minutes or until bubbly.
