Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. zucchini squash, 1/2 lb. bulk sausage, 1/4 c. chopped onion, 1/2 c. fine cracker crumbs and 2 eggs, slightly beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Heat oven to 350Β°.
Wash squash; trim ends and cut into thick slices.
Cook in small amount of boiling water (salted) for 10 minutes.
Drain and chop squash coarsely.
Put sausage and onion in skillet.
Cook until sausage is light brown.
Drain off fat (grease the casserole with a little of the fat).
Combine squash, sausage, crumbs, eggs, thyme, salt and half of cheese.
Put in baking dish.
Sprinkle rest of cheese on top.
Bake 30 to 40 minutes.
