Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 1 c. oil, 2 c. sugar, 3 c. grated peeled zucchini and 3 c. sifted flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Beat eggs until light and foamy; add oil, sugar, zucchini and vanilla.
Mix lightly but well.
Sift flour, salt, soda, baking powder and cinnamon together.
Add to egg mixture.
Blend well. Add nuts.
Divide into 2 well-greased and floured 9 x 5 x 2-inch baking pans.
Bake at 325Β° for about 1 hour or until bread tests done.

Remove from pans and cool on rack.
