Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 c. shredded zucchini (3 medium size), 1 2/3 c. sugar, 2/3 c. vegetable oil, 2 tsp. vanilla and 4 large eggs, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Move oven rack to low position so that top of pan will be in center of oven.
Heat oven to 350Β°. Grease bottoms only of 2 loaf pans.
Mix zucchini, sugar, oil, vanilla and eggs in large bowl.
Stir in remaining ingredients and pour into pans.
Bake 8-inch loaves 50 to 60 minutes or 9-inch loaves 1 hour and 10 to 20 minutes.
