Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 2 c. sugar, 1 c. low-cholesterol oil, 2 c. grated zucchini and 2 1/2 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat sugar and eggs until light.
Then add oil and beat.
Add 1/2 of dry ingredients and beat well.
Remove beaters.
The rest must be hand mixed with a wooden spoon.
Add zucchini and remaining ingredients and mix well.
Pour into 1-pound bread pans that are greased and lightly floured.
Bake at 350Β° for 1 hour. Let stand 10 minutes before removing from pan.
