Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs (beaten), 2 c. sugar, 2 c. zucchini (peeled and grated), 1 tbsp. vanilla and 1 c. oil, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Beat eggs until light and fluffy.
Add sugar, zucchini, vanilla, and oil.
Add dry ingredients to mixture.
Pour batter into two 9 x 5 x 2-inch loaf pans that have been greased and floured.
Bake at 325Β° for 1 hour or until a wooden toothpick comes out clean when placed in the center of the loaf.
Cool 10 minutes and remove from pan to finish cooling.
Can be frozen.
