Zucchini Bread
Zucchini Bread is an impressive dinner. Made with 3 eggs, 1 c. oil, 2 c. sugar, 2 tsp. vanilla and 1 (8 1/2 oz.) can crushed pineapple, drained, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Mix well the first 4 ingredients (eggs, oil, sugar and vanilla).
Add crushed pineapple and grated zucchini; mix well. Add flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir in nuts and raisins.
Pour into 3 medium 4 1/4 x 8 1/2-inch greased bread pans.
Bake in 350Β° oven for 1 hour.
This freezes well in foil.
